Recipe: Pulled Pork

 

 

I love pulled pork sandwiches and they are soo easy to make!
All you have to do is get a pork roast and throw it in your slow cooker and cook until tender.

Then drain the water, shred the meat and put the meat back into the slow cooker.  Add in your favorite BBQ Sauce (mine is Rich & Sassy by Famous Daves) – let it cook a bit and Voila! A delicious sandwich!

 

 

I had this sandwich with some Browning HealthFull 10 Grain bread!This bread is delicious! Moist and the slices are bigger than a normal slice of bread.  It has a great texture to it!
I think this will be a regular in my house!

Recipe: Corn Dogs

 

Well, we decided to try something differentand make homemade corndogs on Friday. It was interesting, fun and definitely a learning experience!! 

Apparently colored popscicle sticks turn your hotdogs the color of this stick (in our case red and green)
Make sure the oil in deep fryer is not too “used”
And, be sure to put the corn starch on the hot dogs before you put on the batter, otherwise the batter will all come off in the deep fryer leaving it a MESS!!

Well, here is the end result

Definitely not the prettiest and they look burnt but that is a result of the very used oil in our deep fryer
BUT
they were actually very delicious.  After the Family hesitated, and finally tried them, they were asking for more.
We will be making these again – and fixing our mistakes the next time!

Recipe: Salsa Chicken

 

A friend of mine made a Salsa Chicken at work over this last weekend and as I am not a fan of salsa, I rather enjoyed the flavor it gave the chicken.  I enjoyed it so much, I decided I would share it with my Family this week.

As I went to prepare it last night so I could just start it in the slow cooker in the morning before leaving for work, I realized I had no salsa.  Living in a small town, our grocery store closed at 5:30p and it was 8:30p and the closest open store was an hour away.  I was bummed, but then I had an AHA moment!  I sell Tastefully Simple, I know I have a salsa on hand.  So, went to my stash of on hand items and I found the Chipotle Queso Starter Dip and I thought it was close enough to salsa.  Looks and smells like salsa, so I gave it a try.  Prepared the chicken and placed it in the fridge for morning.

Recipe:

Chicken of any kind (breast, thigh, leg, whatever you prefer)

1 jar of salsa

In your slow cooker, place the above ingredients and a small amount of water (just enough to cover the bottom of slow cooker) and lt cook until done!  So easy!

Needless to say, it was pretty good – everyone enjoyed it and I think it will become a staple in the house. Heck, we may even experiment with other salsas!

Recipe: Meatloaf

I sell Tastefully Simple and I gave a fellow blogger, Healthy Baby Beans,  the chance to try our Pomegranite Chipotle Sauce and she went out of her comfort zone and tried this delicious sauce on her meatloaf!!

I would have never thought of that and I believe it worked wonders!

Recipe: Kneophla Soup

 

Knoephla Soup

Soup:

sliced carrots
celery
2 cans chicken broth
15 cubes of chicken boullion
5 cups water
4 cups milk
5-6 medium potatoes sliced
pepper for taste
 
*Start the above ingredients in a pot
~~
Dough:
4 cups flour
3 eggs
1tblsp baking soda
1 tsp salt
1 to 1/2 cups of water
 
*Make into dough and then cut pieces into the soup – cook until done – about 1 hour

Caramel + Apples + Pie = HEAVEN!!

Healthy Snacks on the Go

We are always on the go and if you are like me, you get snack happy!  You grab whatever you have lying around in your desk at work or in your car.  You may stop at the gas station and get something very unhealthy like a doughnut.  Well, I have been thinking of this for a while and plan on having ready to go snacks.  Some kept prepared for the kids and some ket in my car for when I am at work or on my way to and from work.  That way I do not get the urge to stop for that doughnut!

I have scoped the internet and found a great list of snacks to use

  • Celery sticks with peanut butter and several raisins on top
  • Rice cakes with peanut butter (good for getting a protein punch)
  • Low-fat cheese cubes
  • Fruit yogurt cup (add in some fresh fruits or nuts for a boost
  • Trail mix
  • Nuts or nut mix (stick to just a handful)
  • Vegetable sticks with a little packet of dip (lowfat salad dressing packets found in salad bars work as easy-to-pack dip)
  • Broccoli or cauliflower bites
  • Half of a turkey or tuna sandwich on whole-wheat bread
  • Cucumber slices (lightly salted or with nonfat Italian dressing)
  • Yogurt and granola
  • Leftover chicken or turkey slices (great to eat cold)
  • Healthy fiber-rich or grain cereal (great to eat dry from a baggie)
  • Pickles
  • Box of raisins or other dried fruit
  • Half a large whole wheat bagel with light cream cheese
  • Apples, bananas, strawberries (any fruit works, these are naturally portable)
  • Mixed berries (these freeze well in plastic bags)
  • Whole-wheat crackers and low-fat string cheese
  • Grapes in a baggie
  • Fruit smoothie in a thermos
  • Almonds
